Delicious Gluten Free Chicken Fajitas recipe, with a fabulous from scratch marinade including lime juice, cumin, and garlic.
This gluten free recipe is super flexible so if you want to serve it straight from the skillet without tortillas to keep it low carb, paleo, or whole30 you can absolutely do that, or a lettuce wrap would work well too!
How to Make Gluten Free Chicken Fajitas
First thing to do is look our your spices, make sure they are not old and have been languishing in your pantry for over a year or they will lose a lot of flavor, best to throw them out and buy fresh.
Then simply mix together all the gluten free chicken fajita marinade ingredients into a large bag or bowl and mix in the chicken pieces so they are well coated. If you prefer to cut up the pieces first you can do that, or you can simply marinade the whole chicken breasts. (1)
Marinate the chicken for at least half an hour in the fridge. While the chicken is marinating you can prepare and slice the vegetables. (2)
Then when you are ready you can cook the chicken in a hot non stick skillet, I prefer to use a well seasoned cast iron pan. If you’ve already sliced the chicken pieces they will not take long to cook, a whole chicken breast may take ten to fifteen minutes to cook evenly.
Once the chicken is cooked simply remove it from the pan and stir fry the vegetables, add a little more oil if you need to and then serve them in tortillas, or with lettuce wraps if you prefer.
Is Fajita Mix Gluten Free?
Some fajita mixes are now made gluten free, you need to read the label carefully as many still have wheat flour as a thickener added to the spices.
For this recipe I’ve made my own blend of fajita spices, but you could use a ready made gluten free blend if you prefer.
Where Can I find Gluten Free Tortillas?
There are several nice brands of gluten free flour tortillas available depending on where you live, but most grocery stores should carry gluten free corn tortillas.
If you’re using store bought corn tortillas I think you’ll find them more palatable if you toast them on a grill or in a hot skillet first, they are not as nice as homemade corn tortillas.

Ingredients
Gluten Free Chicken Fajitas Marinade
- 2 tbsp olive oil
- 2 tablespoons lime juice
- 3 teaspoon ground cumin
- 2 teaspoon garlic powder
- 1/2 tsp paprika
- 2 teaspoon onion powder
- 1 tsp Salt
- 1/2 tsp Freshly ground black pepper
Chicken Fajitas Ingredients
- 2 large chicken breasts , sliced thin
- 2 tbsp olive oil
- 1 large onion , cut into 8 pieces
- 3 bell peppers , sliced
- 8 corn tortillas , (or lettuce for paleo/whole30)
Instructions

Put the marinade ingredients into a large ziploc type bag and add the sliced chicken pieces. mix it all together in the bag to make sure the chicken is fully coated in the mixture.

Put in the fridge for 30 mins – 1hr

While the chicken is marinating prepare the vegetables.

Heat a skillet with half the oil and add the chicken, cook, stirring frequently until chicken is fully cooked through.

Remove chicken to a plate, now add a little more oil to the skillet and cook the vegetables

While the vegetables are cooking you can warm or toast the corn tortillas, I like to ‘toast’ them in a dry skillet.

Once the vegetables are cooked add the chicken back to the pan and warm it all through.

Serve immediately with the tortillas and any combination of salsa, guacamole, sour cream, and shredded cheese.
