Easy Pasta Salad – this recipe is very simple to make and just as quick to throw together.
I’ve included a variety of fresh vegetables including cherry tomatoes, English cucumber, olives, and green onions.
My easy Pasta Salad is pulled together with a tasty white wine vinaigrette and of course I used gluten free pasta in my version.

How to Make Easy Pasta Salad
Step 1 – Start by bringing a large pan of salted water to the boil, then add your gluten free pasta and cook according to the directions on the package taking care not to overcook it.
Step 2 – While the pasta is cooking chop the tomatoes, olives, green onions, basil and cucumber into small pieces and add to a bowl.
Step 3 – Rinse the cooked pasta in cold water and drain well.
Step 4 – prepare the gluten free pasta salad vinaigrette by whisking together the white wine vinaigrette, olive oil, salt, and pepper.
Step 5 – mix the gluten free pasta, chopped vegetables, and white wine vinaigrette dressing, then serve.

Easy Pasta Salad
Quick and Easy Pasta Salad recipe with fresh vegetables and white wine vinaigrette.
Ingredients
- 12 oz gluten free Rotini
- 1/2 cup red onion , finely chopped
- 1 cup yellow cherry tomatoes , chopped small
- 1 cup red cherry tomatoes , chopped small
- ½ English cucumber , peeled and chopped small
- 1/2 cup Kalamata olives , pitted and chopped
- 4 oz mini mozzarella balls , drained and halved
- 1 handful fresh basil , chopped
PASTA SALAD DRESSING
- 1/4 cup Red wine vinegar , or to taste
- 1/2 cup extra virgin olive oil
- 1/2 tsp garlic powder
- sea salt , to taste
- freshly ground black pepper , to taste
Instructions

Bring a large pan of water to the boil and add your gluten free pasta noodles. Cook according to the directions on the box.

Chop the red onion, tomatoes, cucumber, olives, mozarella, and basil according to directions.

When the pasta is cooked rinse it in cold water and drain well.

Make the salad dressing by whisking together all the ingredients.

Mix the vegetables with the pasta, pour over the dressing and mix again, taste and season with salt and pepper as needed.
