How to Make Gluten Free Orange Cake
My Gluten Free Orange Cake is made from a box of gluten free cake mix and just a handful of simple ingredients, it’s very, very easy to make but is full of flavor and definitely has the wow factor I was looking for.
This recipe is made with a rectangular sheet cake with the topping spread over the top, so if you are lacking skills in the cake decorating department then this is definitely the cake for you!
Here are some simple steps you’ll need to follow to make this cake, full and detailed directions are in the recipe card below:
- First, you need to combine your gluten free cake mix, eggs, butter, and mandarin oranges including the juice.
- Second, you need to grease or line the cake pan, I used a 9×13 cake pan lined with parchment paper, then you simply pour in the cake mixture and bake
- Once the cake is baked and fully cooled, mix the whipped topping, pineapple with juice and dry pudding mix, then spread over the top of the cake and chill it.
Make the cake ahead of time
You can easily bake the cake ahead of time, but please note that the cake will get soggy if you leave the topping on it for a long time, so best to keep them separate until later.
When I make the cake ahead I prefer to mix up the topping at the last minute and spread it on the cake near to the time I want to serve it, it will be ok for a couple of hours but the cake will get soft after that.

Make it dairy free too!
If you can find dairy free whipped topping then you can make this cake dairy free too. I have found a couple of brands of dairy free whipped topping in places like Whole Foods.
‘So Delicious’ is one that I’ve used before and it looks the same as the dairy versions and tastes very nice but it can be hard to find and my regular grocery store does not carry it.
To make the cake dairy free you can bake it with dairy free margarine such as Earth Balance. Please note that most brands of margarine contain some milk, and some dairy free margarines (usually the low calorie versions) are not suitable for baking due to the high water content.

Gluten Free Orange Cake {Pig Pickin' Cake}
Ingredients
- 1 box gluten free yellow cake mix
- 1 tsp orange extract
- 4 eggs
- 3/4 cup melted butter , or dairy free margarine
- 11oz can mandarin orange segments
- 8oz frozen whipped topping , (use dairy free if you need to)
- 20z can crushed pineapple with juice
- 3.5oz package instant vanilla pudding mix
Instructions

Preheat your oven to 350F

Grease the sides and line the base of 9x13 inch pan with parchment paper.

In a bowl combine cake mix, eggs, butter, and mandarin oranges with the juice.

mix until combined and pour into the cake pan.

Bake for 35 to 40 minutes or until a toothpick inserted into the middle of the cake comes out clean. While the cake is cooling you can make the topping.

Add whipped topping, pineapple with juice and dry pudding mix to a bowl and mix together until blended.

Spread topping over the top of the fully cooled cake and serve.

The cake will keep in the fridge for a day or two, but it will get soggy eventually so it's best to eat it soon after adding the topping.

If you want to make it ahead I suggest you prepare and add the topping near to the time you plan to serve it.
