My Homemade Gluten Free Waffles are one of the easiest gluten free breakfast recipes to make! They are crispy on the outside and fluffy on the inside, the recipe works with all sorts of different gluten free flour blends so put it on your weekly rotation and start the day right!
I’ve been making my gluten free waffles recipe for years and as I mentioned it is very easy to make, most of the time I have my youngest son measure out the ingredients for me and mix them all together, it’s really not complicated at all.
My tip is to make your own gluten free flour mix as that will make the best crispiest waffles. I have made this recipe with Pamela’s gluten free flour, King Arthur gluten free flour and couple others and they all worked ok.
However, creating your own gluten free flour mix really is best as many of the ready mixed blends have a little too much xanthan gum in the mix for my liking which meant the texture was a little different and softer, and not as crispy on the outside, but that didn’t stop my crew from eating them all anyway!
How to make Homemade Gluten Free Waffles (step by step guide)
Mix your gluten free flour blend with xanthan gum if it doesn’t already have it, and then add the baking powder and mix again.
Beat the eggs in a separate bowl, then add the milk and mix again, then pour it into the bowl with the flour mixture and whisk until they are well blended.
A few small lumps are ok, but I like to whisk the batter until it’s smooth like you can see in the picture below.
Then get your waffle iron ready. If you have a standard size waffle maker this will make about four small waffles, if you have a Belgian Waffle Maker then they will be much smaller as it has deeper pockets and requires more batter, so you may want to double the recipe.
A quick tip is to use a small silicone basting brush to quickly brush on a little oil to the waffle maker between batches to prevent it sticking, and do remember to use a non metal implement to remove the cooked waffles so you don’t scratch the surface of your waffle iron.

What toppings do you put on Gluten Free Waffles?
There are so many options for waffle toppings from peanut butter and bananas, to maple syrup and fruit! Most of the time we like to use a little real maple syrup and some fresh berries if we have them.
Another great option is to make some really crispy bacon and serve it with maple syrup drizzled over the top, it tastes fantastic! I like to make my bacon on a wire rack over a sheet pan and bake it in a 400F oven for about 20 minutes or until it’s crisped up the way I like it.

Gluten Free Waffles
Gluten Free Waffles are a great way to start the day!
Ingredients
- 1 cup all purpose gluten free flour , 140g
- 1 tsp baking powder
- 1/4 tsp xanthan gum
- 2/3 cup water (plus 2 tbsp more if needed)
- 1 large egg
- 1 tbsp oil
- 2 tbsp coconut sugar, , or, honey, or granulated sugar
Instructions

Put all dry ingredients in a bowl and mix well with a fork

Mix all the wet ingredients in another bowl, add to dry ingredients and mix well until combined.

If you want a thinner batter add a little more water and mix again.

Pour 1/4 cup of batter in to the middle of a hot, greased waffle iron. You may need to spread it out a little with the back of a spoon.

Close waffle iron and cook until brown, serve hot.
Recipe Notes
GLUTEN FREE FLOUR
I have found this recipe works best by using my own gluten free flour blend, I find that often the ready made blends that have gums added make a more chewy softer waffle. Those blends work, but making your own gluten free flour blend and measuring the xanthan gum separately is the best option and creates the best waffle.

I have made this with coconut sugar, honey, and granulated sugar and it works well with whatever you choose.
