The easy way to make keto cabbage soup
Start by assembling the ingredients for the soup and prepare the onion and celery by slicing them them into small pieces, then shred the cabbage either in a food processor or by using a large knife.
I think the flavor of the soup is improved if you can saute the vegetables a little first, so add the olive oil and saute the celery and onions for a couple of minutes until they are soft. (see photo below)
Then, pour in the gluten free chicken broth, crushed fire roasted tomatoes, and chopped chicken, give it a good stir and heat it until simmering, do not boil.
Next, add the shredded cabbage salt and pepper and stir it all again. You may find that you need more chicken broth depending on how big your cabbage is so feel free to add a little more as needed.
Simmer the soup, covered, on a medium low heat for about forty five minutes.

Ingredients
- 2 tbsp olive oil
- 1 cup onion, diced , 160g
- 2 ribs celery, thinly sliced , 75g
- 3 cloves garlic , crushed
- 8 cups gluten free chicken broth
- 14.5 oz crushed fire roasted tomatoes, canned , 411g
- 2 large chicken breasts, chopped , 800g approx
- 1.5 lb cabbage , 660g
- 0.5 teaspoon salt
- 1 teaspoon pepper
Instructions

Sauté diced onion, sliced celery, and garlic in 2 tbsp olive oil in a large soup pan over a medium/high heat for about 3-5 minutes until soft.

Add the gluten free chicken broth, crushed fire roasted tomatoes, and chopped chicken thighs and stir well and heat until simmering.

Next add in the shredded cabbage, salt, and pepper, Add more chicken broth if it's too thick.

Cover and reduce the heat and continue cooking on a medium low heat for 45 minutes.

Taste and adjust the seasoning as needed.
Recipe Notes
Nutrition – Serving size is 1 cup (250mls) and the nutrition is calculated assuming it will make approximately ten or more cups of soup total.
Cabbage – I used this savoy cabbage but any green cabbage will do. Purple cabbage may take a little longer to cook.
Chicken – You can use either chicken breast or chicken thighs, whatever you already have. The soup will have more flavor if you cook the chicken in the soup as opposed to adding in precooked chicken.
Tomatoes – Fire roasted tomatoes really add to the flavor of the soup, but you can use any canned crushed tomatoes if you can’t find fire roasted.
