Low Carb Cranberry Salsa is a deliciously festive holiday dip and is a perfect low carb appetizer you can serve at holiday parties and family gatherings!
Cranberries are naturally lower in carbs than many other fruits so the carb count is not really high and comes in at about 5g net carbs per serving.
You can serve it with my Low Carb Crackers, or celery sticks, and it works great served over softened cream cheese or goats cheese.

How to make low carb cranberry salsa
Start by picking over a 12oz bag of fresh cranberries and removing any that are overly soft and squishy, then add the rest to the bowl of a large food processor.
Remove the leaves from the Cilantro stems and add them to the food processor along with the cranberries.
Add the freshly squeezed lime juice, chopped jalapeño pepper, salt and low carb granulated sugar substitute.
Blend until you get the desired consistency, I prefer it quite smooth but it won’t be as red and festive looking as it is when it’s a little more chunky.
Serve at room temperature and store in the fridge.

- 12 ounce fresh cranberries , 4 cups
- 1 bunch cilantro , remove stems
- 4 green onions , chopped (7oz, 1/4 cup)
- 1 medium jalapeño pepper , seeded, diced
- 2 tbsp lime juice , freshly squeezed
- 1 tsp salt
- 1/2 cup low carb granulated sugar substitute , I prefer Lakanto
Instructions

Combine fresh cranberries, cilantro, green onions, jalapeño, fresh lime juice, low carb granulated sugar substitute (see notes) and salt into the food processor.

Blend until you get the consistency you prefer.
