For this year’s Thanksgiving I wanted to make a Paleo Sweet Potato recipe that was more than simply “good for Paleo”, and this is it! It has a gorgeous pour over glaze that’s made with Maple syrup and Orange juice, it’s super yummy!
I want to wow my non Paleo eating family members so I tinkered with this recipe to get it just right, and they LOVED it! It looks super fancy but I promise it’s really, really easy to make but you MUST use an adjustable height Mandoline to cut the sweet potatoes.
I mean, I guess in theory you could use a knife and do it by hand but unless you have Ninja slicing skills you won’t be able to slice it consistently thin like a Mandoline can.
Another option may be to use the slicing disk on your Food Processor, but I prefer using a mandoline with adjustable height settings.

Ingredients
- 4 sweet potatoes , choose long slender potatoes
Instructions

Slice sweet potatoes on mandoline, at thin setting (1/16 inch) I did not peel mine, but you can if you prefer.

Layer the sweet potatoes in 8×8 pan or one of similar size.
I used an oval ceramic pan similar to this that was 8×6 on the base of the dish.

Whisk all Orange Glaze ingredients together and pour over the top of sweet potatoes.

Bake for 45 minutes, or until sweet potatoes are tender.
