How to Make Salsa Verde Chicken
Start by choosing a quality salsa verde, there are many options in the grocery store so it’s not too hard to find one that you like.
Next add the salsa verde to a casserole dish and add the chicken, I found it worked better when the chicken was fully submerged in the salsa, so ignore the photo!
Then, simply brush the chicken with a little olive oil and season with salt, pepper, and garlic (see recipe card for amounts)
Bake the salsa verde chicken for about 30-40 minutes or until chicken is cooked, then top with a grated cheese such as Monterey Jack, then broil for a minute or two until the cheese melts.

What Can you serve with Salsa Verde Chicken?
I ate mine with Cilantro Lime Cauliflower Rice, but regular white or brown rice would work too. It’s also nice with a large green salad served on the side.

Easy Salsa Verde Chicken recipe topped with yummy cheese!
Ingredients
- 16 oz. salsa verde , from a jar
- 1 lb. skinless chicken breasts , or thighs
- 1 tbsp. olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 1/2 cups Monterey Jack cheese
- lime , to serve
- cilantro , to garnish
Instructions

Preheat the oven to 400 degrees F. Pour salsa verde into a large baking dish.

Brush chicken all over with olive oil. Season with salt, pepper and garlic powder. Push chicken into salsa verde so that it is covered with the salsa and bake for 30-40 minutes, until the chicken is cooked through.

Remove chicken from the oven and sprinkle cheese on top. Place it under the broiler for 1-2 minutes until the cheese is melted and bubbly.

Squeeze lime over chicken and garnish with cilantro, serve over cooked white rice.
